Cookie bars are a great way to bake cookies when you are too freakin' lazy to scoop them out in balls and bake 5 dozen at a time. A slow and tedious process when you have PMS and just need the comfort that only a warm chocolate chip cookie can bring. Oh yeah and they are gluten free and actually taste good!
Preheat oven to 350
Ingredients
3/4 cup packed brown sugar
1/4 cup white sugar
1 stick of butter, softened
1 teaspoon of vanilla extract (please don't use imitation, buy the real stuff)
1 egg
3 tablespoons water
1 1/2 cups of GF Flour blend ( got mine at Winco, you can also use plain rice flour)
1 teaspoon baking soda
1/4 teaspoon salt
1 cup chocolate chips ( or if you are really craving chocolate, throw in the whole damn bag)
I use a mixer, but you can do this by hand as well.
Cream together butter and sugars. Add in gf flour first then mix on stir for about 10 seconds, then start adding the rest of the ingredients except for the chocolate chips. When all ingredients are mixed stir in chocolate chips. Grease a cookie sheet, I used a smaller one I believe it was 11x15. Then dump the cookie dough on the sheet and press down to cover as much of the sheet as you can. Make sure that it isn't spread too thin because you want it to cook evenly. Bake on the middle rack of your oven, checking for doneness at around 15 minutes. Mine took about 18 minutes to them the way like them, crunchy on the edges and chewy on the inside. Let cool on pan and cut into pieces. I got about 32 small squares.
